Spinach Artichoke Dip

*Makes a 9X13-inch dish of dip

 INGREDIENTS:
1 1/2 cups whipping cream
2 tablespoons flour
1/2
teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
8
ounces cream cheese, light or regular, softened
16 ounces frozen, chopped
spinach, defrosted and squeezed dry
2 (15-ounce) cans artichoke hearts,
drained
1 teaspoon hot sauce (like Tapatio brand)
1 cup freshly grated
Parmesan cheese
1 cup freshly grated mozzarella cheese

DIRECTIONS:
Preheat the oven to 350 degrees. Lightly grease a 9X13-inch or
similar sized baking dish.

In a large microwave-safe bowl, whisk together the cream, flour, garlic
powder, salt and pepper. Microwave the mixture in 1-minute intervals, whisking
fully after each minute, until the mixture is thickened, about 4-5 minutes.

Stir in the remaining ingredients until well combined. Spread the dip into
the prepared pan. Bake for 25-30 minutes until bubbling and golden on top. Serve
warm with bread or tortilla chips.

Hungarian Chicken Paprikash  (Chicken & Dumplings)

My Grandmother made this all the time and I love it. The recipe from cooks.com is way off so here it is

1 cut up chicken ( I use chicken thighs )
1 med onion chopped
1 tsp paprika
2 tsp oil
1/2 green pepper chopped into 1/4 pices
2 Tsp tomato paste
1 cube of chicken bouillion
1/2 cup of water
1 pt of sour cream ( add as much as you want )
salt and pepper

brown onions in 2 tsp of oil till slightly done ,add chicken & brown
on both sides .
Mix paprika with water add chicken bouillion , salt ,pepper, and green
pepper and let simmer until tender . Remove chicken to a warm platter
and keep warm
Add sour cream to to the pan and simmer  DO NOT BOIL

Flour Dumplings
Beat 3 eggs add 1/2 tsp of salt and 2 cups of flour and add water till
you get a paste mixture ( you want a very firm mixture and adjust the
water or add more flour if needed )
Use a tbl spoon and scoop a spoon full of the mixture and use a second
spoon to drop the mixture into a pot of boiling water and let all cook
for 5-7 min or till done
I have been making this recipe for 15+ years and it does take some
time to get the dumplings recipe correct LOL
