Shrimp Stuffed Tortilla Recipe

Serves/Makes: 6 Ingredients:

    Tortillas
  • 2 cups (500 mL) flour
  • 1 teaspoon (5 mL) salt
  • 1 teaspoon (5 mL) baking soda
  • 4 tablespoons (60 mL) shortening, at room temperature
  • 1/2 cup (125 mL) water
  • Sour cream
How to cook Shrimp Stuffed Tortillas:
    Tortillas
  • Into a bowl, mix together flour, salt and baking soda.
  • Make a well in the center.
  • Cut in shortening, until crumbly.
  • Slowly, into 2 or 3 times, pour in water mix until smooth.
  • Remove dough from bowl knead for approximately 1 minute.
  • Cut dough into 12 equal balls cover and leave to rest for 20 minutes.
  • Arrange each ball between 2 layers waxed paper.
  • Flatten and roll each ball into an approximately 7-inch (18-cm) disc.
  • Preheat an uncreased iron-cast fry pan, over medium heat, for approximately 2 minutes.
  • Cook each tortilla for approximately 90 seconds on each side, until just colored here and there.
  • Cover cooked tortillas with a cloth set aside.
  • Prepare stuffing.
  • Evenly stuff the center of each tortilla spread with a little sour cream.
  • Roll each tortilla, just like a large cigar.
  • Serve.
Shrimp Stuffing Recipe

Shrimp Stuffing Ingredients:
  • 1 1/2 cups (375 mL) shelled fresh shrimps
  • 3 tablespoons (45 mL) oil
  • 2 onions, minced
  • 2 garlic cloves, minced
  • 1/2 sweet green pepper, minced
  • 1/2 sweet red pepper, minced
  • 1/2 sweet yellow pepper, minced
  • 1/4 teaspoon (1 mL) Tabasco sauce
  • 1/2 teaspoon (2.5 mL) paprika
  • 1/4 teaspoon (1 mL) salt
How to cook Shrimp Stuffing:
  • Into a heavy-bottom fry pan, heat oil over high heat.
  • Fry shrimps for approximately 1 minute, stirring.
  • Stir in minced onions, minced garlic cloves, minced sweet green, red and yellow peppers, Tabasco sauce, paprika and salt.
  • Mix stir-fry for approximately 2 minutes, still stirring constantly.
  • Remove from heat.

Chilled Mango Sauce

  • 3 ripe mangoes (each about 3/4 pound)
  • 2 tablespoons fresh lime juice, or to taste
  • 1 tablespoon superfine sugar, or to taste
Preparation Peel and cut flesh from mangoes, discarding pits. In a blender or food processor purée mango with remaining ingredients until smooth. Force purée through a fine sieve into a bowl. Sauce may be made 2 days ahead and chilled, covered.



Spicy Mango Sauce

Things You'll Need:
  • 1 mango, peeled and seeded
  • 1 1/2 tablespoons corn syrup
  • 2 tablespoons garlic sauce
  • diced green pepper
  • diced red onion
  • chopped cilantro
  • chopped celery sticks
  • a pinch of salt
  • tsp of lime/lemon juice
  • This is definatly a dish where you have to really taste as you go because of its fruity ingrediants that can make the disk bittersweet. So take your time with measuring until you achieve the sweet or tarty taste to your preference. In the electric blender you place the diced mango, corn syrup, and garlic sauce, and blend until smooth.
  • 2 On stove top, sauté the diced onion with the cilantro & celery stick with a bit of olive oil, and a pinch of water for about 10 to minutes.
  • 3 Once sauté, then add the already smooth mango, garlic & corn sauce & let it cook for about 5 minutes, and viola! A sweet & savory spicy Mango Sauce to enjoy at the dinner table!
